Happy (almost) SPRING! I received these garden fresh tomatoes from a work colleague back when it was in season (I’m just catching up with my draft posts….). They were so sweet and juicy and it was a great excuse to break open my sort of fancy (local) Extra virgin olive oil.

    ah this looks so good. those are rice patties in between right? they look like indian idlis.

    • Haha! This is inspired by a Caprese salad. My version here uses avocado, instead of fresh basil (I used what we had on hand). The white disc is fresh buffalo mozzarella—you can use any fresh mozzarella, though. The balsamic vinegar really cuts through the richness of the avocado and the creaminess of the cheese.

    • Nope…they’re fresh buffalo mozzarella.
